Pomegranate season is here! This colorful and healthy fruit is versatile in so many recipes from main courses to dessert.
Here is a very simple dessert using pomegranate juice which you can find in almost any market. I blended pitted dates with the juice to add some natural sweetness and creaminess to the coconut milk mixture. The chocolate chips is optional, but I like the crunch it adds. You can also mix in some fresh pomegranate seeds to the ice cream – though I prefer to just use the seeds as a garnish when I serve it.
You’re just three ingredients and twenty minutes away from this decadent treat – so get out your ice cream makers and enjoy this dairy-free pomegranate ice cream!
Dairy-Free Pomegranate Ice Cream
Garnish with fresh pomegranate seeds.
1 can whole coconut milk
1 cup pomegranate juice
1/2 cup pitted dates
1/2 cup mini chocolate chips (optional) or cacao nibs
1. Blend the pomegranate juice and dates until you have a smooth mixture. Add in the coconut milk to the blender and blend.
2. Pour your mixture into an ice cream maker and follow the directions of your machine.
3. Serve immediately or store in an air-tight container in your freezer. Allow to soften for 15 minutes before serving from the freezer.
