Sukkot is the Jewish harvest festival, celebrating the gathering in of fruit, farming and nature. Though there are no specific symbolic foods eaten on Sukkot, fruits and vegetables are abundant in many dishes. An important part of the celebration is building a Sukkah or booth/hut, commemorating the temporary shelters built by the Israelites while wandering in the dessert for 40 years. For this eight day festival all meals are eaten in the sukkah.
